During my time traveling through county kitchens in Ireland, I learned the magic of deglazing the lamb pan with a rich, dark Irish stout. The deep malty undertones pair beautifully with local Dubliner Cheddar folded directly into the potato mash.

Key Ingredients:
- Minced grass-fed lamb
- Irish dry stout
- Fresh rosemary & thyme
- Sautéed peas & sweet carrots
- Dubliner Cheddar potato mash
"Fold a tablespoon of cold butter and half a cup of shredded Dubliner cheese into the warm potato mash before piping for a golden, bubbly finish."
