During my time traveling through county kitchens in Ireland, I learned the magic of deglazing the lamb pan with a rich, dark Irish stout. The deep malty undertones pair beautifully with local Dubliner Cheddar folded directly into the potato mash.

Key Ingredients:

  • Minced grass-fed lamb
  • Irish dry stout
  • Fresh rosemary & thyme
  • Sautéed peas & sweet carrots
  • Dubliner Cheddar potato mash
Mark's Kitchen Secret:

"Fold a tablespoon of cold butter and half a cup of shredded Dubliner cheese into the warm potato mash before piping for a golden, bubbly finish."
